Vegan Irish Colcannon

A classic Irish comfort dish, now made vegan for the mindful yogis. Sure, it’s not strictly sattvic, but sometimes even a yogi deserves a hearty scoop of tradition, especially on Saint Patty’s Day!

Ingredients + Directions:

  • 2 medium potatoes, peeled + chopped
  • 1 1/2 cups cauliflower florets

2 cups green cabbage

  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 2 tbsp. olive oil or vegan butter
  • 1/4 cup unsweetened almond or oat milk
  • salt & pepper to taste

1. Boil potatoes & cauliflower

  • cook them together in salted water for about 12-15 minutes until very soft.

2. Cook greens

  • in a pan, heat oil and saute garlic and green onions for 1-2 minutes. Add cabbage and cook until tender.

3. Mash

  • drain potatoes & cauliflower, then mash with almond milk, salt & pepper.

4. Combine

  • fold the sautéed greens into the mash and mix.

5. Finish

  • drizzle olive oil and top with green onions.
