Vegan Irish Colcannon

A classic Irish comfort dish, now made vegan for the mindful yogis. Sure, it’s not strictly sattvic, but sometimes even a yogi deserves a hearty scoop of tradition, especially on Saint Patty’s Day!
Ingredients + Directions:
- 2 medium potatoes, peeled + chopped
- 1 1/2 cups cauliflower florets
2 cups green cabbage
- 3 green onions, sliced
- 2 cloves garlic, minced
- 2 tbsp. olive oil or vegan butter
- 1/4 cup unsweetened almond or oat milk
- salt & pepper to taste
1. Boil potatoes & cauliflower
- cook them together in salted water for about 12-15 minutes until very soft.
2. Cook greens
- in a pan, heat oil and saute garlic and green onions for 1-2 minutes. Add cabbage and cook until tender.
3. Mash
- drain potatoes & cauliflower, then mash with almond milk, salt & pepper.
4. Combine
- fold the sautéed greens into the mash and mix.
5. Finish
- drizzle olive oil and top with green onions.
